Billecart-Salmon
Billecart-Salmon was founded in 1818, so 200 years ago to this day. It is the story of two families from Mareuil-sur-Aÿ, a little village, by the River Marne, and the house was founded when Nicolas François Billecart whose great-great-great-great Grandfather married a lady called Elisabeth Salmon, two longstanding families that have lived in the village. They were farmers and traders, and they got together and created the house of Billecart-Salmon.
Billecart-Salmon is a much-respected family-owned maison renowned for their finesse, delicacy, and balance, for uncomplicated, genuine, elegant pleasure. Its popularity and success are greatly connected to its non-vintage rosé, one of the very best in this category, and a true benchmark.
2008 Billecart-Salmon, Cuvée Louis Salmon
Grapes: Pinot Noir / Chardonnay / Pinot Meunier
Style: Crystalline, pale gold color, adorned with subtle yellow and green reflections.
Elegant and complex, the nose opens with fragrances of yellow fruits and citrus fruits (candied mandarin, limoncello, Williams pear).
An aromatic profile with chalky character of great purity.
On the palate, there is a nice refreshing balance, precision and long finish

NV Billecart-Salmon Cuvée Rendez-vous N˚2, Extra Brut
Grapes: 100% Pinot Noir
Style: A golden yellow hue with cherry blossom and violet aromas on the nose, juicy citrus is present and onto the palate, candied lemon paste, tangerine and licorice. The Pinot Noir is giving a great texture and with 5.5 years on lees the mid palate evolves towards a chalky and slightly peppery tastes. It has a great finish with tangy flavors of fresh raspberries.

Grapes: 100% Pinot Noir
Style: A noble, elegant expression on the nose with hints of candied citrus fruit, crushed hazelnut, almond and mild tobacco. An ample texture with the presence of oak ageing aromas of Williams pear, fresh quince, panettone, complimented by roasted pineapple, puffed buckwheat and precious woods. The generosity of this wine transports the finish to rooty, mineral realms, with an attractive saline character.

Grape: 60% Pinot Noir, 40% Chardonnay
Style: Complex bouquet that mingles confit citrus, peach, orchard fruit and dried papaya with nuances of iodine, brioche, and honeycomb. On the palate, it is full-bodied, voluptuous, savoury, with depths of oyster-shell minerality and the brioche scent broad. Long and dense with clean and citrus-infused finish.

Grape: Chardonnay, Pinot Noir, Pinot Meunier
Style: Very intense notes of dried fruits, fresh citrus, white flesh fruits as well as finely buttered seductive hints. The palate is rich and complex with flavours of lime blossom, lemon pastry cream, grilled brioche, and toffee. Can be enjoyed now or hold.
